FUNNEL CAKES!!!!!!


Hi Every one. To continue our theme of great fair food for our up and coming fair season we would like to introduce the Almost County Fair Funnel Cake.


Nothing invokes the images and smells of a County Fair or event quite like the Funnel Cake.


This fun, crispy, tasty, sugar powder coated treat has been know to start quite a few debates through out many an event, and family


Here is a quick recipe that you can try at home to awaken your taste buds for the up and coming fair season.


Ingredients


  • 2 large eggs, room temperature

  • 1 cup 2% milk

  • 1 cup water

  • 1/2 teaspoon vanilla extract

  • 3 cups all-purpose flour

  • 1/4 cup sugar

  • 3 teaspoons baking powder

  • 1/4 teaspoon salt

  • Oil for deep-fat frying (we used vegetable oil.)

  • Confectioners' sugar

  • Topping of choice (strawberry, chocolate, ect)


Directions


  • In a large bowl, beat eggs. Add milk, water and vanilla until well blended. In another bowl, whisk flour, sugar, baking powder and salt; beat into egg mixture until smooth. In a deep cast-iron, electric skillet, or deep sided skillet and then heat oil to 375°.


  • You can cover the bottom of a funnel spout with your finger; ladle 1/2 cup batter into the funnel. Holding the funnel several inches above the oil, release your finger and move the funnel in a spiral motion until all the batter is released, scraping with a rubber spatula if needed. (Tip, you can use an old ketchup squirt bottle to put the batter into the oil. Use the funnel to place it in the bottle.)


  • Fry until golden brown, 2 minutes on each side. Drain on paper towels. Dust with confectioners' sugar; serve warm.


  • You can also add strawberry pie filling, chocolate filling or any other to suit your taste.


This has been one of our family s fun recipes that we enjoy making from time to time and we at time double the batch to make sure we have enough. There have also been instances of powdered sugar fights to break out to the amusement of all.
