As many who know me can attest this one, along with the funnel cakes, are my down fall.
There is nothing like a good corn dog during the County Fair. Strolling through the midway while munching on this treat brings back many memories to me. Both young and old enjoy this and now you can have it at home as well.
Ingredients
1 package (8-1/2 ounces) cornbread/muffin mix
2/3 cup all-purpose flour
1 teaspoon ground mustard
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/8 teaspoon ground cumin
1 large egg
1 cup 2% milk
10 hot dogs (we prefer All Beef)
10 wooden skewers
Oil for deep-fat frying
Directions
In a large bowl, combine the first 7 ingredients. In another bowl, whisk milk and egg; stir into dry ingredients just until moistened. Let stand for 15 minutes. Insert skewers into hot dogs; dip into batter. (Tip Use a tall glass or mason jar to be able to coat the hot dog entirely. careful of over flowing the glass.)
In an electric skillet or deep-fat fryer, heat oil to 375°. Fry corn dogs, a few at a time, until golden brown, 2-3 minutes, turning occasionally. Drain on paper towels.
Hint: Don't forget to let the batter stand before coating the hot dogs. It thickens up a bit and clings better after 15 minutes. Also make sure the oil temperature returns to 375° between batches. so that you get a great result and not burn or under cook them.
Have a plate with paper towels to sop up the rest of the oil and serve with french frys and pickles.
This family favorite is a hit with my kids, and I'm sure it will be with yours as well. It is another of our food favorites that can be made during this #covid19 #quarantine time at home. It's also just another way to get ready for some #fairtimefun.
